As well as a wide range of stalls showcasing the highest quality cheeses and wines, there will be some exciting activities for you to take part in. Please note all the tutored tastings with Tim Atkin MW require a ticket and limited spaces are available.

Friday 14th October

Valentina Harris – cooking demonstration – 3 Italian dishes. Valentina is the Chef Coordinator of the Cheese &  Wine Festival and The Chocolate Festival, as well as our on stage host.  A witty raconteur and chef demonstrator in her own right, Valetnina will start off our Cheese and Wine Cookery Theatre Sessions with 3 pasta dishes that feature cheese – Spaghetti Cacio e Pepe, la Carbonara, and Maccheroni ai 4 Formaggi, whilst keeping you entertained with stories and clever tips.

Laura Amos of The Desert Deli – baking demonstration.
Laura  is the amazing woman behind The Dessert Deli, supplying Luxurious Desserts of Exceptional Quality Handmade & Packaged. Available @ Fortnum & Mason & Selfridges Food Halls.  Laura’s pedigree in terms of her pastry chef career is very impressive and she will join us at the Cheese & Wine Festival demonstrating her own very special version of that timeless Italian classic: Tiramisu.

Signe Johansen – cooking demonstration. Signe Johansen, aka Scandilicious, is a cook, food writer and recipe developer who grew up in Norway but now lives in Bloomsbury, London. She trained at Leiths School of Food & Wine, and after graduating worked in the Experimental Kitchen at Heston Blumenthal’s Fat Duck in Bray. Signe is a co-author of The Ultimate Student Cookbook and her blog, www.signejohansen.com, specialises in modern Scandinavian cooking and baking. Scandilicious: The Secrets of Scandinavian Cooking,, is her first Scandinavian cookbook and was published by Saltyard Books in May 2011 to widespread acclaim with one reviewer hailing Signe as the Nordic Nigella. Her second book, Scandilicious Baking, will be published by Saltyard Books in May 2012. Signe will be cooking and baking speciality Scandinavian dishes: Snøfrisk (Norwegian goat’s cheese) on Peter’s Yard Swedish sourdough crispbread with smoked sea salt, radishes and raspberry vinegar, Jarlsberg & Fennel Muffins, Scandilicious Macaroni Cheese with five cheeses and Chocolate Daim cake with a secret ingredient (it’s Norwegian brown cheese).

Caldesi – cooking demonstration. Giancarlo, restaurateur, met Katie, artist,  in 1997. He loved her painting, she loved his pasta. They now have two restaurants, a cookery school and two sons. At The Cheese & Wine Festival the inimitable Caldesi team will be demonstrating various authentic Italian dishes from their repertoire, all using Italian cheeses.

John Quilter – cooking demonstration. John is a food terrorist and has been described as a food ‘Ring Master’ – where he brings performance and all elements of the show together, putting the fun back into food. Through his ‘Food Busking’ and ‘Food DJ’ (terms coined by him) he explores street food with street culture, and food becomes his guitar. He is very spontaneous, with anarchic food stunts that challenge people’s food fears – you have been warned!   In this session, will prepare some of his very special dishes that feature cheese and wine.

Outsider Tart – baking demonstration. Outsider Tart will entertain us at The Cheese & Wine Festival with a demonstration of something deliciously cheesy! A couple of professional guys moved from New York to live and work in London – but discovered that good, wholesome cupcakes, sweet pies and fresh tarts were really hard to come by. Outsiders as they both are, they set about rectifying the situation by turning a favourite hobby into an award-winning business. Outsider Tart is an authentic American bake shop and cafe based in Chiswick which is devoted to all things sweet and yummy. Their first book, Baked in America, and with a foreword by Rachel Allen, is out now!

Meantime Brewery & La Cave a Fromage – cheese and beer pairing.
Asked about their tasting session at the Cheese & Wine Festival, Meantime Brewerey said: “What two foods are more made for each other than beer and cheese. It’s not just a question about wonderfully complimentary flavours but it is also the remarkable similarities in production. Cheese is beer backwards, or beer is cheese backwards. Take your pick. Both take remarkably simple raw materials but using very slight differences in method and  – when done properly – a generous helping of time, to produce finished products of astonishing diversity and complexity. Henry Harris + Patricia Michelson – cooking demonstration with La Fromagerie cheeses.

Chef Patron Henry Harris returns to The Cheese & Wine Festival this autumn, partnering Patricia in this unforgettable cookery demonstration centred around the very best of French cheeses.  When asked about his restaurant, Henry simply says: “Just what I want to eat when I go out, good honest bourgeois cooking.”

Patricia’s love of cheese began up a mountain whilst she was skiing in Meribel. She returned to London with a wheel of Beaufort Chalet d’Alpage which she sold from her garden shed graduating to a stall in Camden market a year later. LA FROMAGERIE now comprises two award winning shops and a successful wholesale business along with Patricia’s award winning first book ‘The Cheese Room” to her name.
Patricia’s second book entitled CHEESE was published in April 2010 by Jacqui Small with a foreword by Jamie Oliver. A stunning book, it is a global journey of taste, tradition and terroir.

QED – Stink and drink tasting. Be sure to bring your gas masks as QED present some of Europe’s smelliest cheeses. When it comes to the pongy and the pungent, it can be difficult to sniff out wines to match. Supercharged with umami, such cheeses tend to clash with wines, reducing reds to metallic wrecks and overwhelming whites. QED will try to guide you past the pitfalls to some magnificent marriages.

Caroline Hope – Baking demonstration – sweet and savoury scones.  Everybody seems to have their own closely guarded secret to ensure their scones are the best.  In this demonstration,  Caroline will impart her secret for making perfect cheese scones, time after time.  They make an excellent alternative to crisps and nuts when serving wine as an aperitif or a substitute for bread. She will explain how you can adapt the recipe to for both savoury and sweet scones and the best way to serve them. Caroline has been teaching tea party baking skills for more than 15 years both in the UK and Japan.

Steve Walpole  – Considered to be one of the finest young chefs in the country, Essex boy Steve has been passionate about cooking since he started a Saturday job in a local restaurant at the age of 15 and went on to gain a whole host of college qualification, diplomas and awards. Steve has appeared on TV many times recently on a Channel 4 production with Heston Blumenthal discussing airline food.

Rachel de Thample has worked in the kitchens of Marco Pierre White, Heston Blumenthal and Peter Gordon. She has been writing on food issues for over a decade: she was Commissioning Editor of Waitrose Food Illustrated for five years and contributed to the Borough Market Cookbook: Meat and Fish. Rachel is currently the Food Editor for the organic box scheme Abel & Cole. Her new cookbook,‘Less Meat, More Veg’ was hailed as ‘the cookbook of our time’ by Mark Bittman of the New York Times.
